Boiled Pork - 수육

Introduction
Samgyupsal Suyuk (삼겹살 수육) is a Korean dish of steamed pork belly. Pork belly is known to be high in fat and thus rather than grilling it, most Korean steam it order to consume less fat. Suyuk is usually eaten with samjang, kimchi and salted shrimp. One can also eat it with celery and cucumber slice dipped in black bean sauce, with bean sprouts in spicy sauce or even in the refreshing Manel Nangchae (garlic) sauce.

Ingredients
  • 2 lb pork
  • 6 cups water
  • 1 onion
  • 12 garlic cloves
  • 2 green onions
  • 1 tbsp fresh ginger
  • 1 dried hot pepper
  • 1 tbsp soy bean paste
  • 1/2 tsp black peppercorns

Directions
  1. Obtain 2 lb pork. Normally, people like to use a fatty cut of pork for this dish, such as the pork belly or neck. this recipe is using lean meat. The choice is up to you.
  2. Obtain 1 medium sized onion (cut in half), 2 green onions, 12 garlic cloves, 1 tbsp worth of fresh ginger, 1 tbsp soybean paste, 1 dried hot pepper, and 1/2 tsp of black peppercorns. These ingredients give the meat a really good flavor.
  3. Add the pork, 6 cups of water, and the rest of the ingredients in a large pot. Cook it on medium.
  4. Once it starts to boil, cook for about 1 hour, or until the pork is completely cooked.
  5. Occasionally remove the foam from the surface of the broth for better flavor.
  6. When the pork is done cooking, remove the meat from the broth. Discard the other ingredients from the broth.
  7. Slice the cooked pork thinly while it is still hot. You can cut it into bite-sized pieces.
