Pine Nut Porridge

Pine nut juk is a simple Korean porridge that is thought to be health. Pine nuts porridge is considered healthy and pine nuts have a lot of nutrients and vitamins (vitamin A, C & D). Koreans eat this for breakfast, but usually, jat juk used to be saved for special occasions because pine nuts are expensive and not always available.
It is creamy, and it has a very good nutty flavor. This porridge is good for people who cannot chew or digest food well. It is also good for somebody that does not have much appetite.

잣 (jat) = Pine nut
죽 (juk) = Porridge

Recipe
Ingredients: Pine nuts, rice, salt and water.
Directions (for 1 serving)
Pine nuts
  1. Soak 1/3 cup of short-grain rice in cold water for 1-2 hours.
  2. Rinse and drain and put it into a blender.
  3.  Add 2 tbs pine nuts (with the tip removed) and 2 cups of water to the blender.
  4. Blend the mixture finely for about 3 minutes, until it turns into a milky white liquid.
  5. Pour the liquid into a heavy bottomed pot.
  6. Cook it over medium high heat. Keep stirring with a wooden spoon.
  7. It'll get thicker in about 3 minutes. Add ½ ts of kosher salt, lower the heat to medium low, and stir for 5 more minutes. The porridge will get thinner and a little soupy.
  8. Transfer the finished porridge to a serving bowl and garnish with a few pine nuts on top.
  9. Serve warm.

Yield 3-4 servings
Main Ingredients
  1. ⅔ cup short grain rice (sushi rice)
  2. ½ cup pine nuts
  3. 4½ cups water
  4. 1 tsp sugar
  5. ¾ tsp salt
  6. Some pine nuts for garnishing
Direction

  1. Soak ⅔ cup of short grain rice in water for about 2 hours. If you are short on time, soak the rice for at least 30 minutes.
  2. Prepare ½ cup of pine nuts. Remove the top part from each nut.
  3. After 2 hours, drain the water. You will get about 1 cup of soaked rice.
  4. Grind the drained rice with 1 cup of water in a blender until there are no chunks.
  5. Strain the rice mixture for soft and creamy porridge. Then add 3 cups of water into the pan.
  6. Grind ½ cup of pine nuts with ½ cup of water in a blender for about half a minute on high speed.
  7. Cook the rice mixture for about 10 to 15 minutes on medium. Keep stirring it with wooden spoon, or your porridge will get lumpy.
  8. When the porridge becomes thick and starts to bubble, it is ready for the pine nuts.
  9. Pour the pine nut mixture into the porridge, stirring gently. It is important not to stir too often though, or the pine nuts will make your porridge become too watery. Once it starts to boil again, cook for 3 more minutes on medium-high.
  10. This recipe does not make thick porridge. If you want a thicker texture, you can reduce thhe amount of water.
  11. After it is done cooking, add 1 tsp of sugar and about ¾tsp of salt. Mix gently and serve.
  12. You can garnish with whole or ground pine nuts on top of the porridge.
